Easy, Healthy Sushi Rolls

If you love sushi rolls like I do then you have to give these a try. Simple and easy recipe that’s also good for you. Brought to you by FITnancials.

Ingredients:

  • Ripe avocado
  • Seaweed sushi sheets
  • Cucumber
  • Carrot
  • Sesame seeds
  • Rice vinegar
  • Sushi rice
  • Sliced ginger (optional)

Directions:

Step 1: cook rice & prepare veggies
Cook rice. While rice is cooking, slice cucumber, carrot, and avocado into small pieces.

Step 2: mix other ingredients to taste
In a large bowl, mix together rice, rice vinegar, and sesame seeds. I did not measure everything out, but instead poured in as I went and tasted along the way.

Step 3: prepare the rolls on seaweed sheets
Lay out seaweed sheet and on one side, spread out the rice mixture about 2 inches wide on the seaweed sheet. Lay the vegetable slices in a line from one side to the other.

Step 4: roll & serve
Slowly roll tightly into a roll. Cut to 1″ pieces with a sharp knife, and clean the knife every time you cut. (Makes it easier to cut sushi rolls).
